Dinnertime. The moment of truth in my busy household. After a busy day of work and mommy-ing, do I attempt to make a full dinner? Will anyone notice the difference between a fresh cooked meal and a frozen one? How fast can the pizza delivery guy arrive? Even as a professional recipe developer, sadly this is my actual thought process 90% of the time. Us working parents know all too well that by the time dinner comes, you are just too tired. Period. Add on top of that the fact that certain miniature people in your household have very finicky palettes and you find yourself contemplating just serving a pint of ice cream and a spoon. But with the new year, I am committed to finding easy ways to get myself out of this dinnertime rut. So, I have teamed up with Buitoni to create one option for a fresh, versatile, and vibrant meal that even the most frazzled parent can easily tackle. I present to you my Tortellini Muffins. 

When coming up with this recipe, I knew that the key would be delicious, simple, and readily accessible ingredients. The flavors also would have to be pleasing to even the most discerning of (munchkin) taste buds. Lastly I wanted the meal to be pre-portioned out, so that you had one less thing to worry about. That’s when the lightbulb went off: muffins! Hear me out… you mix a few fresh and scrumptious ingredients in a bowl, place them in a muffin tin, pop in the oven, and you have a fabulous dinner. Sounds easy enough, right? Yes, let’s do this…

Tortellini Muffins

INGREDIENTS:

2 1/2 cups of Buitoni 3 cheese Tortellini

2 sausage links

2 cups of Mozzarella (shredded)

1 1/2 tablespoons of fresh thyme

1 tablespoon of fresh chives

Buitoni Marinara Sauce (garnish)

DIRECTIONS:

  1. Preheat the oven to 350 degrees Fahrenheit. Thoroughly grease a large muffin tin and set aside.
  2. Mix the Buitoni 3 cheese Tortellini, cubed sausage links, shredded mozzarella, and fresh thyme in a large mixing bowl.
  3. Pack the mixed ingredients as densely as possible in each mold of the muffin tin.
  4. Place in the oven and bake for 10 – 12 minutes. 
  5. Remove from the oven and let cool slightly until warm. Serve and garnish with the fresh chives and Buitoni  Marinara Sauce. Enjoy!
